Culinary Instructors Train on State-of-the Art Ovens

January 28, 2015 -- Instructors from CNM’s Culinary Arts department received an updated training on four state-of-the-art commercial Rational ovens last week.

“These ovens can do just about anything -- roast, bake, grill, steam, smoke and proof (warm dough),” said Victoria Martinez, academic affairs director of the Culinary Arts & Hospitality Program.

At the Rational Academy, the instructors learned how to use all the functions of the ovens, which they will share with their students.

“The ovens are a prime example of bringing together technology and the art of cooking,” Martinez said.
